I made these this for Sunday morning breakfast.

So good for a easy quick breakfast!

 

 

Orange Poppy Seed Muffins

Ingredients

4 cups unbleached all-purpose flour

4 teaspoons baking powder
1/2 teaspoon fine salt
1 cup unsalted butter, at room temperature,
2 teaspoon finely grated orange zest
1 1/3 cup granulated sugar,
4 large eggs, at room temperature
2 tablespoons poppy seeds
1/2 cup milk

½ cup orange juice

Directions

Preheat the oven to 375 degrees F. Line a 2- 12 cup muffin pan. Sift the flour, baking powder, and salt into a medium bowl and set aside.

In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer in a large bowl,
cream the butter, zest, and 2/3 cup sugar until light and fluffy, about 2 minutes. Scrape down the sides of
the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition. Remove the bowl from the mixer. Stir in the poppy seeds.
Mix orange juice and milk.
Fold the flour in 3 parts into the butter mixture, alternating with the milk/orange juice  mixture in 2 parts, until just combined.
Be careful not to over mix the batter. Divide the batter evenly into the muffin tin and sprinkle the tops with
sugar. Bake until golden brown, about 25 minutes. Cool muffins in the pan on a rack.

Be Fun
 
When I think of being fun I always think of family and friends. These are the people I enjoy spending my time with the most. I love to have an open door policy at my home. My wish is that everybody would know that they are welcome in my house at any time. I love to entertain and often have friends over for dinner. The trick to having a really great get together is that the hostess in not in the kitchen fussing over a fancy dinner the entire time. Prepare as much as you can the night before or the morning of. Also you don’t just need to have dinner parties. Have friends or family over after church for brunch. It would be simple and delicious to prepare a great muffin and fresh fruit or a breakfast dish that is made the night before then put in the fridgerater over night and baked the morning of. Serve something that you have made before and that is fairly simple and that you enjoy making. Make something casual but really delicious, serve it family style. For a great lunch prepare a great soup and simple sandwiches or a fabulous salad with a grilled meat, maybe a roast that has been in the crock pot. Serve simple drinks such as iced sweet tea, lemon or lime water and your favorite soda. If you are relaxed and have set a casual atmosphere your guest will feel right at home. You want people to come into your home and not feel like a guest but family. If you serve a simple meal than maybe make a more extravagant dessert, or vise versa. The thing to remember is your guest are they to spend time with you, don’t spend all your time in the kitchen pulling your hair out wanting to kick yourself. Relax and enjoy yourself!
